​From plums in orchards in Young NSW, to our own home-grown figs and feijoas, we are always exploring local seasonal produce to create exclusive seasonal products.
Who are we?
My name is David Gillies
I've always had a love for American style whiskeys and been intrigued by the backwoods way of distilling. I had an idea that I could bring a true handcrafted, artisan product to the market and something a little different from what was out there. Several years later, a shed, a still and lots of support from friends and family, Gillies Bros Distillery was founded in 2021 on our family property in the Yass River area of New South Wales.

Everything about Gillies Bros Distillery is either done by us, or sourced from locals in the Yass Valley and surrounds. We are a small batch craft distillery. That means that we do everything by hand, from milling the grain, to filtering, bottling and labelling. We source our key ingredients locally too, obtaining our fruit from local and nearby orchards in Young or from our own property, and supporting other local small businesses for everything else.
You will find us at many local markets, and if you live locally, you will even see me hand delivering to you!​
